Vin Noe "Shadows" Saint Aubin de Combe 2023
D&M NOTES (01/2026):
OVERVIEW: This comes from the "La Combe" premier cru designation, a collection of parcels on the valley or Chassagne Montrachet side of Saint Aubin.
TASTING: This opens with aromas of citrus, a kiss of oak, white stone / chalk minerality, and just there apricot. On the palate this is moderate in weight from the extended lees contact with good acidity and a flavor set that balances the fruit and just there barrel with a core of excellent minerality.
ABOUT THE PRODUCER: Vin Noe started out as a micro-negociant project by Californian Jonathan Purcell after working in Napa at White Rock Vineyards and time in cellar and fields at a handful of top notch producers in Burgundy. A half decade ago he bought the cellar and parcels of Jean Jacques Morel. Morel had long practiced organics across his 0.80ha of vines in Saint Aubin and went even further by being renowned for his no-till approach. The organics has been maintained, though he does selectively till the vineyards. In the cellar there is a natural fermentation in old barrels with extended lees contact and no additional sulfur utilized throughout the time in cellar.
