PRODUCER NOTES:
TASTING: “A yellow colour with golden highlights. A nose of great nobility, combining woody, pastry and roasted notes. On the palate, an ample, creamy structure reveals charismatic aromas, all carried by a taut, alert structure.”
TERROIR: "An exceptional location , at 15 meters from the Grands Crus and only classified as a "Village". Clay-limestone soil. Slight south-facing slope."
VINEYARD MANAGEMENT: “Sustainable, no herbicides. Partial grassing with mechanical working of the soil. High Environmental Value Level 3 certification.”
WINEMAKING: "Hand-picked grapes only, in crates of up to 30 kg. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 24 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts. Ageing In French oak barrels for 10 months. 20% new barrels. Regular stirring of the lees."

ABOUT THE PRODUCER: First introduced to us by our dear friend and importer Charles Neal, Domaine Bader-Mimeur is a tiny family-owned Burgundian estate whose offerings we have been proud to carry on our shelves for years. While the family has owned and managed vines in and around Chassagne-Montrachet since the 1700’s, it was in 1920 when Charles Bader, a wine merchant at the Halle-aux-Vins in Paris, married Elise Mimeur, that the Domaine was officially established. At the time, Elise's father owned the Domaine du Château de Chassagne-Montrachet but, due to a family division, the adjacent Château is now run by another producer who markets wines from many other regions of Burgundy. However, the Bader-Mimeur family retains ownership of 98% of the vines of the Château de Chassagne-Montrachet (~5 hectares) as well as other vines located in the Chassagne-Montrachet and Saint-Aubin villages (~3 hectares). Today, Charles and Elise's great-granddaughter Marie-Pierre Bader-Fossier and her husband Alain Fossier are in charge of the domaine, with the help of their children Nathalie and Sébastien.
Working with their Vineyard Manager and "Maître du Chai" (winemaker) Jean-Luc Huguenin, the family produces about 33,000 bottles/year comprising small lots of Bourgogne Aligoté, Bourgogne Chardonnay, Bourgogne Pinot Noir, St. Aubin Blanc En Remilly and Chassagne-Montrachet Vieilles Vignes. Their viticultural and production techniques are low intervention, with all of their grapes harvested by hand; fermentation started with a pied de cuve; aging in barrel for approximately a year; and finally, a light filtration before bottling. The resulting wines are consistently classy, complex, balanced and expressive.
