This is composed of 90% organically farmed Tibouren with the small addition of 10% Grenache. It was fermented with native yeasts in Stainless Steal and rested for a short six months in quite large oak barrels. The nose is quite the beguiling thing with complex aromas of white cherry, boysenberry, mixed spices, thyme and herbs de provence, and a light clay note. On the palate this is lively with flavors of delicate red fruits, violets, clay, and a mixed spice tone.
